Sunday Brunch: Lemon Ricotta Pancakes and Homemade Scones

If I were to pick, brunch would probably be my most favorite part of the weekend.  As opposed to the narrow slot of the day to make an elaborate weekday breakfast, weekends lend more to slow and lazy prep of (rich) favorites.  It's two meals in one so that makes the guilt less!

Here are two of our Sunday brunch favorites.  We like them so much we couldn't resist sharing so we often invite friends over for brunch. The Dutch also makes a mean cappuccino so the recipients of our brunch invites have no qualms coming over on a lazy Sunday!

Lemon Ricotta Fluffy Pancakes
{Serves about 2}
1/2 cup ricotta cheese
1/2 cup milk 
1/2 cup self-rising flour
1 egg
A few drops of vanilla extract
Zest of one lemon (do not skip!) and zest of one orange, if you have it
Juice of 1 lemon

To make it is super easy.  Mix everything in a bowl. Allow the batter to rest a couple of minutes and cook in the griddle.  Drizzle with maple syrup in toss in fresh berries.  Voila!

Yogurt Parfait
And of when else fails and sluggishness strikes, there's always the good ol' yogurt parfait.  Just toss in nuts and berries with some European style plain yogurt!  Just make sure that when you buy plain yogurt, check the sugar and carbohydrate content.  I stay away from anything labeled "low fat" because that means they amped up sugar in its place.  Yikes!
